When the Earth meets the Sea, in 4 inspired sequences.
We start gently with a plate from the South-West: Tarbais beans are enhanced by an 8-year-aged FAUCHON Modena vinegar, a perfectly runny organic egg, and the character of Ospital Basque chorizo.
On the seaside, we turn to Occitania with a grilled octopus with autumnal flavors, accompanied by a butternut spread with honey and FAUCHON almonds, all sublimated by a squash broth with organic lime.
La Terre takes over again with a chuck of Charolais beef confit, perfumed with Voantsy Périfery FAUCHON pepper, served with a parsnip mousse and a hearty Colonnata bacon jus.
For a sweet finish, FAUCHON roasted Solliès fig with Acacia honey is surrounded by a creamy vegetable base, a light yoghurt mousse and a fruity sorbet for a subtle touch of freshness.
